KAREN'S SWEET ONION CORN BAKE
2 large Vidalia onions, thinly sliced
1/2 cup butter
1 cup (8 ounces) sour cream
1/2 cup milk
1/2 tsp dill weed
1/4 tsp salt
2 cups shredded cheddar cheese (divided)
1 egg - lightly beaten
1 can (14 3/4 ounces) cream-style corn
1 package (8 1/2 ounces) cornbread/muffin mix
In a large skillet, saute' onions in butter until tender.
In a small bowl, combine sour cream, milk, dill
and salt until blended; stir in 1 cup cheese.
Stir mixture into onion mixture - remove from heat and set aside.
In a bowl, combine egg, corn, cornbread mix.
Pour into a greased 13 x 9 x 2 baking dish.
Spoon onion mixture over top. Sprinkle with remaining cheese.
Bake uncovered at 350 for 45-50 minutes
or until top is set and lightly browned.
KAREN'S CARAMEL CORN
Pop 1 ½ to 2 cups pop corn
2 cups brown sugar
½ cup white Karo syrup
½ tsp. Cream of tartar
2 sticks oleo
Combine above ingredients over medium heat.
Boil 5 minutes.
Add 1 tsp. Baking soda.
Pour over popped corn.
Bake in 250 degree oven for 30-35 minutes.
Cool on cookie sheets.
KAREN'S BANANA SPLIT CAKE
In 9 x 13 pan
First layer:
2 cups crushed graham crackers
2/3 cup butter melted
Mix and press in bottom of pan.
Bake until done, be careful.
Second layer:
2 sticks of butter , softened
2 eggs
2 cups powdered sugar
1 tsp vanilla
Beat together until you can spread over first layer
Third layer:
3 large bananas, sliced & dipped in pineapple juice
Fourth layer:
1 can (16 oz or larger) crushed pineapple well drained)
Fifth Layer:
1 Large container of Cool Whip
Sixth layer:
Sprinkle with chopped nuts and maraschino cherry halves
Chill 8 hours before serving
MARIE'S FUDGE-FULL
PEANUT BUTTER BARS
1 pkg. Yellow cake mix
1 cup peanut butter
1/2 cup butter or margarine, melted
2 eggs
Combine by hand. Stir until dough holds together.
Press 2/3 or dough into bottom of
an ungreased 13 x 9 baking pan.
Reserve remaining dough for topping.
1 cup (6 oz.) semi-sweet chocolate bits
1 can coconut pecan (or almond) frosting.
In a heavy saucepan - heat to melting. Spread over dough.
Crumble reserved dough over filling.
SUSAN'S CORNED BEEF
2-4 lbs. corned beef
Boiling water to cover
1/4 tbls oregano
1/4 tbls rosemary
1 tbls dill
2 cloves garlic
1 bay leaf
6 whole cloves
2 stalks of celery
1 stick cinnamon
1/2 orange
1 medium onion quartered
Cover and simmer 3-4 hours until tender
AUNT MAGIE'S COOKIES
2 cups sugar
1 cup shortening
1 cup sour milk or buttermilk
2 eggs
1 teaspoon vanilla
Sift together:
5 cups flour
2 teaspoons baking soda
1 teaspoon baking powder
3/4 teaspoon salt
1/2 teaspoon nutmeg
Cream sugar and shortening. Add eggs and vanilla. Beat.
Add milk to sifted dry ingredients. Chill dough.
Roll out and cut with any shape cutter.
Bake at 375 degrees.
